If he's sober, he probably turns it into a grappling affair and chokes Wilder out.

If he's drunk like he often seems to be when he's in public, he probably gets his head punched clean off his shoulders.

They probably would just say hello and not fight at all. they are pro fighters who fight for big money. They don't risk injury or death for free. They have no logical reason to fight each other if they ran into each other on the street. More likely they would have a short friendly talk and be on their way. if they did fight I would pick Wilder to win by KO with the first punch. If Wilder missed that first punch the fight would probably go to the ground and Jones would win.
