JMM and Barrera didn't learn and start speaking until they were later in their careers - it REALLY helped JMM to take his popularity to a level that would not have been possible without imo. It did wonders for Cotto and Pac. Lomachenko is also another guy who it would help immensely.
He speaks and understands English very well. I was watching backstage footage of the weigh in and he's speaking English to the people around him.
When you see him on TV he's speaking to his people. Ask anyone who speaks Spanish and they'll understand. The translation we get don't hit like it does when he says it in Spanish. Canelo stays on code with his people.

I think it has to do with perception. Why get out of his comfort zone to speak with an accent and potentially struggle to find the right words in a foreign language when he can just speak his native language and have translators help out the monolinguals.
As it has already been mentioned, many fighters have been made fun of, especially in this social media era, for things they say in English (as a second language) or how they pronounce them.
Maybe someone should ask why Floyd didn't learn Spanish since he took over Cinco de Mayo for a few years. Anyway I wish I knew Spanish to understand Juan Manuel Marquez on Golpe a Golpe
