Great narrative slightly undone when Ortiz's own team come out and take the blame and put it on their promoter. So now with that info, knowing Hearn offered $7M ($500K vs Wilder) and Ortiz's promoter turned it down would you say AJ is actually out there trying to fight formidale opponents?

Ortiz took 5 weeks notice to fight Wilder for 500k so there was no reason for Ortiz to refuse 6 weeks and 7mill to fight AJ. He did call out AJ after his fight with Miller was announced rather than before so am not totally convinced it was their promoter that 7 mill was a low ball offer. Now Ortis is saying that Wilder is a harder fight than AJ so why not take the easy 7 mill rather than a harder fight with Wilder for less?

That's fine. If these fighters can't take short notice fights for what ever reason that's fine. But ortiz said he could and said he would take that fight on short notice. Then when he got offered it he said No.
