A few reasons. He didn't want to sign a four fight deal with any broadcaster. He likes being able to own his event, sell the rights in each territory, participate in revenue streams promoters usually hide from fighters, etc.

He wanted the Breazeale fight to be seen by a wider audience, to continue growing his profile as he has been. He'll be seen by far more people on Showtime than he would be on DAZN. There's no reason the Breazeale fight had to be on DAZN in order to fight Joshua.

He wants the Joshua fight to be on PPV so they can both make as much as possible. It doesn't make sense to put a fight of that size on DAZN.

DAZN doesn't have a deal with Joshua and couldn't guarantee that Wilder would get to fight Joshua if he signed with DAZN. Even if Wilder is willing to consider a huge DAZN offer, it would have to be just for the Joshua fights, not other fights, and Wilder would have to know how much Joshua is getting.
