Canelo simply couldn't make light-middleweight anymore but didn't want to make the step up to 160 for a while, which is quite poor really, but he was the A-side and took advantage of it. It was obvious they didn't want to fight GGG earlier than they did. Even Canelo-weight was killing him but he would make it to avoid 160.
De La Hoya was saying Canelo's body isn't ready for middleweight, but then straight after he said that his body was ok to fight at 164 v Chavez but not 160 for GGG?... of course, because Chavez is a bum. His body "adjusting" to 160 was never an issue, fighting GGG earlier was.
Canelo had been a middleweight for a good 18 months or so, but they did anything to not fight GGG until they were essentially backed into a corner and had no more excuses regarding weight and other thing, and wanted to see GGG fading.
I do believe at one point Canelo was adjusting to moving up, but the 12-18 months before the GGG fight was simply about avoiding him. And after all that, they still had to get gift draw.
