However, how many fighters can you name where every fight on their resume is a real challenge to them at the time?

I'm not even talking about first twenty bum fights to start a career either.

I think they all take on fights against lesser guys sometimes because at the time, this is the only deal that could be worked out.

Boxing is a business first, after all.
Lennox Lewis comes to mind. His list of voluntary defences is pretty impressive. Once he was on world level he never took any easy fights. Briggs, Vitali, Tyson, Botha, Holyfield, Tucker, Golota, Rahman, Bruno & 30-1 Phil Jackson was his easiest voluntary. 7 of those voluntaries were against ex-world champions. Botha, Golota & Jackson were the only ones who weren't. Botha got stripped of his IBF title for PEDS. He fought Lionel Butler & Ruddock in eliminators. His only week opponent once he was on the world level was Justine Fortune. He fought Tommy Morrison & Ray Mercer as stay busy fights. That is pretty impressive & there is nobody in HW boxing since he retired who has fought that type of competition. There isn't many in any era who fought at that level. His voluntary defences were against tougher guys than some of his mandatories like Mavrovic & Akinwande who were 2 of his weaker title defences. Tua & McCall were his tougher mandos. Lewis was the furthest thing from a cherry picker & one of the last fighters who took on everyone. The stats don't lie.
