Prime George Foreman would be one of my choices along with Jack Dempsey and Mike Tyson.

I'm picking heavyweights because if I had to chose a henchman I'd be skeptekal about a guy who weighs 140lbs, unless he's an expert at grappling.

Oh and you can't use Vitor Belfort as an example, because he's already a proven mixed martial artist and unproven in pro boxing.

That'd be a strange technicality.
