"Size don't win fights, skills do"

I remember back when this was a favorite saying amongst a certain group of fans.

Why come they don't say that anymore?

Size don't necessarily win fights but it gives u an advantage, the same as have a longer reach, being taller for example, it's only effective if u use it like u should, if I was a larger fighter I would bully my opponent around the ring and make him want to quit but just because u may have that advantage it won't win u the fight unless u can use it, think of Floyd/canelo canelo fought like he usually does which is box but that won't win a fight against Floyd but had he fought like maidana he would have been more effective imo

Maybe because it was never true in the first place. Skill helps win fights but size also helps win fights. Size doesn't matter much in fights between huge heavyweights but it means a lot at lower weights. A skillful fighter might beat a larger but less skillful opponent but if the skills are close to equal the bigger fighter will win. As a rule larger fighters hit harder and take punches better and that gives them an advantage over smaller fighters and most boxing fans know this.

This is the same guy who said "What's Lara done at Middleweight to deserve a GGG fight"

There's nothing confusing about this. If the skill levels between two opponents are relatively equal then a size advantage (or any other type of advantage) can have a significant effect.

Sure doesn't. But a big man with skills will always beat a small man with skills. That's why Sam Bowie and Hakeem Olajauwan were picked before Jordan.
