Honestly, that's how I feel too. And to me, this is not about Canelo. I like him and I'm glad he's going for GGG. It's going to be one hell of a fight.
Re-hydration limits should be set up by athletic commissions, sanctioning bodies, etc. People saying fighters will get hurt by coming in dehydrated are on the wrong side of the argument/safety spectrum in y opinion. They're making the people that are going to extreme measures just to get a size advantage, that although legal, is definitely bending the rules.
To explain myself better, by bending the rules I mean that although they're technically following the rules, they're cheating the intent of the rules, which is to have fighters of the same size battle it out to determine who's better.
