Obviously, Hagler-Hearns was the last one that comes to most folks' minds. I can't remember, but I always figured the Roy Jones-Bernard Hopkins fight was hyped up well back in its day. I know Roy Jones-James Toney was, although that was super middleweight. One fight that got no hype but certainly went well beyond expectations was Jorge Castro-John David Jackson. Of course, Hopkins-Trinidad was really hyped up as was Hopkins-De La Hoya, both of which turned out to be, well, not so great. I'm thinking Martinez-Chavez, Jr. maybe?
