Chavez Jr, isn't Maidana though. Chavez Jr. is much more popular and has headlined a lot more events than Maidana.The $7mil was incentive to re-sign. Chavez could have taken the $3mil with no contract extension. To put it in perspective, Maidana got paid only $1.5mil for a mayweather fight.
Chavez Jr only hurting his own career by turning down these fights. Arum wont let him out of his contract until he fulfills his end of the agreement.

You have to ask yourself, what the other side is offering him though.Chavez Jr should have taken that $7 mil deal with a 2yr extension if u ask me. The only notable thing he's done so far is get his azz kicked by Sergio Martinez. What does he think he's really worth? In reality the $2mil no extension deal is just about the max what he's worth just because of the last name recognition. Arum offering him $7mil was a bonus and a generous one at that.
