Canelo will eventually be at 160. I think that is clear but I'm not sure if he struggles badly to make 154. It's quite common for fighters to request an extra pound in nontitle fights. Alexander/Karass is one recent example.

The Angulo fight does suggest that he at least struggles somewhat though. It was a last minute change to add the extra pound. No one would pay 100,000 if they didn't have to.

Not really, Golovkin actually weighs in as a MW. He saying no I'm not a SMW yet fighting above the 160 pound limit, whereas Canelo is doing exactly that. "No, no MW for me" then proceeds to have to fights out of the 154 division lol.

It's just one pound, and he's still a young fighter who hasn't hit his prime yet. At least he's fighting good opponents. Give the kid a break. He may as well lose his next fight, which he has a huge chance of doing so all this talk, whining and complaining could be for nothing.
