This goes both ways. If you don't put on a lot of weight after sweating down to a unnatural weight that you don't walk around at, you can end up being rendered down to Delahoya-vs-Pacquiao status.
If you put on too much, you could be sluggish. What's good is that Canelo is young and has much better recuperation than your 30 and up year old fighter. He can get away with some training and diet mistakes that he won't be able to later on in life. So he might as well get as much mileage out of fighting at 154 as he can before his body start mandating to him that it's time to move up. He is not at that point yet.
