My pick - James Toney. I wonder if that's why his chin stands up so well?

toney looks fat but since he is so relaxed he is able to last longer than most fighters. The anxiety and nervousness and tenseness of a fighter tires out a fighter.
I'd disagree with the other two choices to be honest. Mayweather is a class act, but hasn't really been tested yet. Toney is going in with guys way above his natural weight and strength and treating it like a walk in the park. (I loved it when he touched gloves with Jay Nady! )
Hopkins... I dunno. Having to hit your opponents in the nuts and headbutt them doesn't really say "relaxed" to me.
About Mayweather, you're right. It's much easier to look calm and cool when there is really no risk that you're going to lose. Even still though, he does look good.
When I watch Hopkins, I've always gotten the impression of relaxed. He always seems to fight with the attitude "don't worry, I'll get the job done". That said though, I'm not really a fan of Hopkins. Primarily because he compares himself to some extent, to Hagler.
As for other candidates:
Barerra is always calm
Juan Marquez showed experience and heart when he fought Paquiao. You're mind would have to be calm after being destroyed in the first round like that.
Even though this is going to get too much attention - Vitali is always calm in the ring as well.
