It's the first fight I ever show anyone when they are curious about boxing. Just classic.

The Street Fighter version of that fight is a classic. Quite a short clip to show non/casual boxing fans.

I don't know if brutal fights like Corrales-Castillo 1 are going to convert non boxing fans. They may think it's too gruesome.

I'd go for masterpieces by individual boxers as well. That's what made me a boxing fan. Exciting ones like Mayweather-Corrales, prime fights from Roy Jones, Pacquiao-Barrera, ones that are fun to watch and make the person watching appreciate the skill that fighter has.
