You gotta point, but this guy is not a waiter, he's a security guard just doing his job. Any crime or felony he witnesses must be reported. He can literally get fired for not reporting even the smallest thing.

Yes Floyd can also convince the victim to drop the charges in exchange for money.

But evidence doesnt have to be caught on tape and im sure there were witnesses.

The fact that prosecutors pushed to for an arrest warrant tells you something

Exactly, I think the arrest warrant proves that the victim is planning to sue Floyd in civil court. Without the criminal charge, the civil case is dead in the water. Floyd is screwed if there is tape and/or witnesses willing to testify. If there is neither, then I'm really surprised that this wasn't settled out of court. Just pay the guy off to avoid this kind of public embarrassment.
