Most of them fritter away the money they earned fighting and have to get a job. Owning a boxing gym is a great way to hemorrhage money, so some of them do that until they go broke. Yes, many of them have no choice but to work or to sponge off of other people. Unfortunately, most of them are uneducated and have no clue how to handle money.

Do you think a M.A in literature handles money better than a highschool graduate general construction contractor ?

Probably depends on how the fighter handles his money...

Given that most (ie. nearly all, in reality) boxers never get to earn real big money i'm sure they'd have to work afterwards, or even during their career.

Remember for every elite guy out there there's dozens of crappy journeymen who box for the love of the sport, extra cash, hoping to make it big etc.

Depends on how long you pursue a career in boxing. Like Hopkins, he's pretty old and has earned himself alot of money in boxing id imagine so he's more then likely not to work again! Where as some fighters retire at the age of 35 or so id imagine if they are smart they'd invest in some sort of business or something along the lines of that. Im guessing most boxers do take up some sort of work i.e Create a gym, become a trainer, or something do to further more with boxing. It's highly unlikely they will never find themselves working again unless your Mayweather Jr or De La Hoya.
