I dont blame santiago at all. Roach was just killing him in the media throughout the whole build up. Santiago was just releasing some pent up anger & frustration at roach for thinking that cotto wouldnt make weight.

If cotto didnt make weight, that reflects bad on the trainer. Santiago felt some vindication & wanted to get something off his chest.
