The injury was an excuse. He was actually trying to land a fight with Ngannou, but it fell through. He told Wilder's camp he was hurt out of one side of his mouth while he was negotiating with Francis out of the other, and he was left without a dance partner.

The Wilder vs Zhang stuff came from another story. I can't find it now but it was Wilder's camp saying they tried to get Zhang but Zhang claimed injury so they settled for Parker. Of course it's entirely possible Wilder's camp is BSing but I did read it here.
