I was going to say B-Hop too.

Here's my list. In-ring mentally tough fighters, not what they do outside of the ring like "throwing tantrums" or "drinking piss" or "throwing down people's flags and stomping it" etc.

Timothy Bradley

Marquez comes to mind first, he never quits.

There are many more, most of which have already been named.

Honorable mention to Arthur Abraham, he fought almost a complete fight with a broken jaw, that takes a lot of determination.
