Heart: Bobby Chacon easily. Wife commits suicide and he fights and wins the next day, and ultimately becomes champion again. Not to mention his wars.
Chacon did show tremendous heart late in his career. However I remember being there live when he quit in his corner against Ruben Olivares. I can't imagine any fighter having more heart than Muhammad Ali.

That was early in his career though, just one year into it, a learning experience against a veteran Olivares.
I do agree with Ali being perhaps the best pick, he simply refused to accept losing.
