It depends on what you're looking for.
If its pure brutality - Castillo vs. Corrales I and Gatti-Ward I are the best.
If you're looking for a great ending - Castillo vs. Corrales I (again), Ali-Foreman, Taylor-Chavez I.
A masterful performance - Clay-Liston I and recently I'm a fan of Hopkins over Tarver, that was the way every champ should go out.

In all honesty, I'd have to say Jack Dempsey vs. Jess Willard was a great fight. A shockingly violent, barbaric affair, but great to watch. Makes me wonder what must boxing have been like in the bare knuckle days.
