I suppose the obvious offhand is Foreman who was more of a brawler who much later on learned to jab well and put punches together more artistically..

Ali pre and post suspension; the change in style seems to have appeared midway through Ali-Frazier I

Bernard Hopkins went from a DIRTY brawler to a Jedi-Master boxer.
Marco Antonio Berrera to a certain extent as well.

          Tunney.

          Robinson.

          Duran.

          Probably Moore.

          Floyd (based on certain fights).

Pazienza also went from a brawler to literally a dancer later on which was crazy

Really good subject, not often talked about.

Manny Pacquiao had quite a change from his early days being an extremely active puncher relying mostly on the left hand. later he could box very well and was a two fisted boxer-puncher when his output slowed down.

Roy Jones jr. Went from flashy slickster/puncher to rope a dope punching bag.

Really one of the beauties of this sport is to see fighters improve, with some of the greatest fighters in the world still adding new skills and adapting to their physical decline.

That growth/change/adjustment appeared first in the third Haugen fight. But I can't remember who his new trainer (for that fight) was; he helped bring about the change in Paz's style.

                Anyone remember who it was?

Marco Antonio Barrera is a great shout. I definitely noticed him becoming more disciplined after the first Pacquiao fight.

Humberto “Chiquita” Gonzalez to me is the best example of this. Early on in his career he was mostly a brawler but lost 2 fights he was winning because he got into a firefight. After that Nacho Beristain turned him into a brilliant boxer who was extremely hard to beat. He outboxed Carbajal in 2 and 3.

Floyd is a great example too. Compare him from Corrales-Gatti to the end of his career. Huge difference, but I think he had to be smarter for health reasons (hands) and he had to fight as smart as possible as all those guys were physically much bigger and way younger too.

                    - -JCChavez went from being a smooth moving boxer to a plodding punch yer lights out menace.

Mike Tyson did the same from his highly trained original bob and weave.
