Now that? was before my time! lol. But I do know this: Raised and back in my fair city when the privalege allows...You would be hard pressed to get a bad steak, a bad meal in Gotham. One of my favorite places in my youth was a place called Tads. It was a budget steak house... You could, when I was a boy, go in there with a fiver, and for 3 bucks get a steak hot off the grill, a baked potato with all the fixings and they gave you a piece of garlic bread... Absolutely divine. I would put that choice cut of meat, the way it came hot off the grill, seasoned well, and with perfect carmilization, against many prime cuts I have had.
I am a believer that despite people saying let a steak rest... the only way I enjoy it these days (when I was young I would inhale anything tasty cause I was active and always hungry) Is when it just comes off the cooking surface. I make the family steaks all the time but do not even eat them, just do not enjoy beyond a few pieces hot off. I will go one step farther and say that many mushrooms one can get in an Asian market, are more delicious when seasoned well, than most of the garbage meat that people in this country want to be a cheap resource.
I wish we could all buy meat humanly and properly raised, and eat less of it. I have been trying to minimize Pork consumption for years, because Pigs are so intelligent. But sea food is so expensive these days and it is hard to get fresh and either wild, or farmed at a decent location. they have fixed a lot of the oyster beds here in Maryland! I love Oysters, clams and shrimp. I even found a place I can buy louisiana shrimp with the heads still on. You can make this great sauce Piquante with the shrimp heads, similar to the crawfish heads, the fat inside...So much flavor! So rich and delicious.
I have seen so much good food that cannot be gotten anymore. Have you heard of Chubbs? They are young whitefish. we got them in the ***ish delis in New York when I was a kid. only occasionally can I find them now. I make whitefish salad with the bigger whitefish, and I was toying with making some gefilta fish lol. My dad loved gefilta fish. It is like ***ish tuna fish. Still can get great lox! Hard to find, and no it is nothing like that crap they sell at places like Trader Joes. The Asian markets have Sashimi quality Tuna and Salmon. I buy Salmon that way and we eat it raw...dipped in a bit of soya sauce. I prefer that to most cooked salmon.
I think that Dempsey's place was like a midpriced place for families in the theater district. You had a lot of places like that in the old times Square area. More expensive than a place like Tad's but not on the order of a real steak house. You still have plenty of those around lol. I don't enjoy steak enough to want to do a real steak house, rather than just buy prime myself. You can get it, but not in many places. Grew up on the gulf coast where the ol' man would go down to the fish market in the afternoon for the days catch, usually Ling for a fry or shrimp for a basting and broil.
These were trusty, local hardscrabble types, thus I refuse to buy fish being an inlander now knowing the terrible industrialized environmental costs that result in the terrible toxicity of modern fish.
My ol'man and my Popeye spoiled me with T-bones, thus fixing my own bacon wrapped filets over a grill of oak, pecan mainly, but also peach and mesquite when the mood strikes.
Overall, not a big meat eater as much as an enjoyer. Bean and cheese tacos with cheese and my own picante sauce or my own pizza just as agreeable.
