Yea agreed on evan fields...i got his career set pretty early on in my collection too, and mike tyson for obvious reasons. Evan Fields was a beast. No doubt.

The most entertaining fighter to me hands down was Evander Holyfield. He was the easiest to watch in terms of viewing every single fight he ever had (available) back to back. Man that's a tough one. For sheer entertainment...morales, trinidad, roy jones come to mind. Those were among the first career sets i bought...along with mayweather and bhop. I think it would be impossible to pick my all time favorite fighter. The most entertaining fighter to me hands down was Evander Holyfield. Too many to list...I've been following boxing since i was about 12...I've seen nearly every meaningful fight i had access to since the mid-late 90s. Before the days of nearly every fight being uploaded to youtube, i bought lots of career set dvds just to see early fights of fighters i liked.
