If you have been paying attention during Canelo's weigh-ins and staredowns its clear that he is not 5'9. He's noticeably shorter than Trout, Lara, and Amir who are legit 5'9ers. He was half a inch shorter than Floyd and about the same height as Cotto.
Now, height has nothing to do with size. Some guys are just built short and stocky, others tall and lanky. Some of the greatest fighters such as Manny, Tyson, and Duran fought with height disadvantages in most of their fights. Even in MMA great fighters like GSP, Daniel Cormier, and Fedor had height disadvantages but beat the brakes off most everyone they faced.
But, the problem is that Canelo wants to box like a counter puncher. He won't be able to do that against significantly taller opposition. He would have to be extremely aggressive and bully people on the inside with his heavy hands. But he does not fight that way. But even against significantly smaller guys he doesn't like to use his size advantage where this would be extremely beneficial, hell we all saw it in the Floyd fight. Down on the cards, with no hope left still stubbornly tried to outbox Money May.
Which is once again why Floyd took the Canelo fight. Yes Canelo was significantly bigger, but he was longer than Canelo in reach and height. As we all know Floyd doesn't like fighting opponents with more reach than him. Like Margarito, Paul Williams, and would not rematch Oscar. Hell I even believe Floyd would fight GGG if GGG was a stocky man like Alvarez.

You still gotta meet some quotas to be a star or else you won't be. You're either with bench pay, and unknown, or in a different career.

So this guy holding his cash cow status, protected with judges, while not fighting any threats is just holding up the entire sport.
Your pretty much right. However tall he is, he knows he'd be much smaller against real 160 pounders. It would more or less be the end of his career probably, so I don't really hold his ducking against GGG against him. But if he is not going to fight 160 pounders, he at least needs to fight legit top 10 154 pounders at 155. And if he does that, he's alright with me.
