Pound for pound can't be proven and is just personal opinion on how good a boxer is for his weight right now. Unless the number one guy is really obvious like Mayweather was after beating Pacquiao you will NEVER get everyone to agree on who is the best or 2nd best etc. pound for pound. If Canelo did what you said he would be my number 1 guy but not everyone would agree with that.
It depends how he hypothetically beats them.
I think you would make the case for him easily being top 5 at that point if we're assuming the rest of the boxing world remained frozen in time as is now.

Canelo seems like he has no intention of fighting at the full 160 limit.
Realistically we have a better chance of Canelo fighting Crawford, Bradley or Matthyse at 155.
