what about, K1, Strikeforce, UFC, Cage Rage... they could be considered as Belts / Organisations...

Ya the UFC's cards have been ****ing hilarious lately. Totally watered down, the entirety of the HW division is injured and the MW and WW divisions have been cleaned out and complete BS decisions at LHW. The only interesting fights involve Fedor and he's not signing. Looks like MMA is the one dying.

MMA doesn't have one champion per weight class. Unless you're referring to a single promotion such as strikeforce, UFC or WEC.
