I haven't seen all the fights from 2007, but from what I have seen, there are 3 that stick out:
Darrell Woods MD8 Samuel Miller
Kelly Pavlik TKO7 Edison Miranda
Miguel Cotto TKO11 Zab Judah
Although Pavlik-Miranda was quite entertaining, I think it was a bit too one-sided for it to get the FOTY award.
Cotto-Judah would have had a chance, if Zab didn't fade in the late rounds and stop punching like he always does in big fights.
I don't think Woods-Miller will be able to get the fight of the year, mostly because it is such a small-scale fight. I mean, when is the last time that an 8 round fight got a huge award like FOTY?
One that I missed from earlier this year that I heard was very good was the Barrera-Marquez fight, which I am going to have watch soon, so that could be included in the discussion if not for my ignorance. Does anyone have any good fights that they think should be included in the FOTY talks from 2007?

Agreed... it is also true that Barrera is due for an excellent fight since his last few fights have sucked. It could be a great performance from Barrera like he did against Erik Morales in their third fight after Barrera was destroyed by Pacquiao in their first fight. That could be the sleeper for FOTY 2007.
I think the fight of the year is still to come. it might be Marquez - Vasquez 2. But I'v seen all the fights mention except for hurta - diamond and I think we can get a lil better.
Pavlik vs Miranda
Cotto vs Judah was too much of a one sided beat down.
I can't believe these two things exist side by side. I don't think Miranda won a single round, and clearly didn't hurt Pavlik at all. Judah at least won a couple of rounds and wobbled Cotto, plus Judah lasted 5 more rounds than Miranda.

Bell vs Mormeck II
Marquez vs Vasquez I
Marquez vs Vasquez II (when it happens)

bell-mormeck 2 was great till mormeck started running..and if i remember correctly, open scoring killed it....
vazquez-marquez was great 2 but it finished in a crappy way...
vazquez marquez 2 should be FOTY if it finishes with a conclusive and enfatic victory...
I still don't have a favorite, and wouldn't argue if any of the four were considered the frontrunner:
Mormeck-Bell II (was a slam dunk for top honors through the first 8 before Mormeck went on auto-pilot from 9-12)
Kastidis-Earl (hell of a fight, but I thought with the exception of the 2nd round a fairly one-sided bout)
Marquez-Vazquez I (incredible fight, though anti-climactic ending)
Sakata-Vazquez II (great fight, but again, not "damn, i just watched the FOTY").
People keep selling Cotto-Judah, but I don't see it. It was a great fight, but dominated by Cotto. Zab had his moments, and a puncher's chance at least through seven, but never really seemed like a threat to win from as early as the 3rd round on.
Oneil Bell is just flat out the most exciting fighter in pro boxing.

katsidis earl is my favourite. never really got off on pavlik miranda. havent seen bell mormeck which alot of people are saying was a block buster.
It was a great fight and one of the reasons I really like Mormeck now and can't really choose who I want to win in his next fight against Haye.
Bell v.s. Mormeck II by far.
And I'm just convinced there are too many people who haven't seen it.

Earl Katsidis was the first time i'd ever seen Katsidis fight and i was really impressed. i cant wait to see him fight on sat. It would have been good for him to fight Guzman. Shame it never happened
