Likely a mixed bag. Apollo, Achilles, Helen of Troy are described as blonde. Many sculptures and paintings depict the ancient Greeks as lighter skinned with straight or wavy hair, light colored hair and eyes. Though there had to have been mixing of races back then from Egyptian explorers. I would think being on the Meditteranean they would be more olive toned.
