How would you define boxing IQ? Would you define it as the ability to adapt in fights or the overall skill level of a fighter?
In ring strategy basically. For example knowing what punches to throw and when to throw them. It doesn't have to be the ability to adapt. A fighter's ability (skill) allows him to execute what he's thinking about every second so it contributes to ring IQ. The greater the fighter's said abilities the better he will put into practice what he's thinking.
An excellent example of Mayweather's ring IQ is shown here albeit against a washed up opponent:
