A Jermell undisputed is a big fight. The three others you named are about the same level of popularity. Mell is the draw here.

No, Canelo criticized Andrade's style. The context was 168-175 as options for Canelo Alvarez vs Matchroom fighters. Andrade means nothing at 160 if Canelo already beat GGG for P4P. Therefore, when Canelo is given options by GBP vs Matchroom: Smith, BJS, or Main Events+Matchroom why would Canelo look at Andrade if DAZN didn't even approve it to begin with? We also learned per Coppinger that DAZN never felt Andrade was a premier fight, so Matchroom wasted DAZN+GBP time for marketing any possibility for Undisputed. Smith or BJS's belt or Kovalev are more lucrative to Canelo's resume than Andrade's Middleweight title.

Its true that Andrade swerved Jermell, TWICE.
But for some reason he ain't scared of Jermall at all, or at least he doesn't appear to be. Truth is though, Jermall has also failed to call out Andrade's bluff at all, probably because he also doesn't want that smoke.
Let's face it, that slick, cagey southpaw style is Jermall's kryptonite. Just look at how difficult it was for him against Austin Trout and Koborov. Unless he could hurt and drop Andrade with every clean punch hw lands, he'd probably get outboxed and lose by a landslide.
I think Jermall and his team know this, and so does Andrade and his team. That's why they won't fight Mell but are all for fighting Mall.
I remember there was an interview with Trout and the Charlo bros. They asked Trout, since he was one of the few people, if not the only one who fought both brothers at the elite leve, who he thought was the tougher brother.
He said he would prefer to fight Mall then Mell.
He said Mell's style was tougher and unpredictable, which made it hard to time him and anticipate what he'll do next. He also said that Mell was faster and more explosive.
He said that even though Mall was much stronger and hits harder, but that his style was less tricky and easier to deal with.
So maybe Andrade and team see the same thing, and maybe Mall knows this as well.
Still, ducking is ducking. As fans, we don't care what style gives you fits, we want to see the best fights.
Charlo (Mall) better stop ducking Andrade.
GGG, Canelo, and Saunders better stop ducking Andrade.
And if Mell moves up to 160 or calls out Andrade, he better stop ducking.
