If Taylor becomes undisputed 140lb champ in 2020...

just 3 years after Crawford did the same, does that say more about the quality of those fighters or the lack of depth in the division?

He might be able to do that but there are some good fighters at 140 and I think it's stronger than when Crawford unified it.

Lack of depth. Though a win over Ramirez would be better than any of Crawford's title wins at 140.

The division is undoubtedly stronger right now and it would be more impressive if Taylor or Ramirez unified, but I’d still pick crawford over either of them.

The win over Prograis already is.

Postol was a solid win though, I give him a good shot to beat Ramirez.

            Both.

They're both top P4P fighters and if Josh completely unifies he's top 5 in the world to me just like Crawford.

That being said, 140 is not 147 or 160 in terms of quality

A super lightweight belt is worth SOOOOO MUCHHHHH LESSSS than a welterweight belt, so it becomes much easier to fully unify the division, because having a random belt in the division isn't worth very much. So the risk vs reward makes it worth it for the various power brokers to attempt unification fights and eventually undisputed. It's much tougher at welterweight, where the belts are worth so much more and the power brokers don't want to risk losing control of one of them.
