Height can change with age or even day of the week / time of day. I would not be too worried with some variation of 1" in measurements. If they werent standing up tall or if their spine was more compressed at the end of the day, vs they were stretched out ect. But only about an inch variation is what you could expect.
Only fighter I seen real up close in person was Winky Wright, he is billed as 5'10'' and that seems pretty spot on, it was a long time ago but he was taller than me, I was 14 at the time not fully grown, so probably 5'8'' at the time and ended up 5'10'' in a few more years.
Him and Tyson, so if Tyson is around 5'10 or so himself. They billed him as 5'11'' but they are also old here too and not perfectly upstraight, so all you can really get is a ballpark, an inch difference isnt a big deal.

I have been next to Parker and Haye, I think they’re billed as 6’4 and 6’3. I’m 6’1ish and didn’t feel any of them were much taller, certainly not by 3 inches or even 2. They could be 6’2

I've never understood this height difference. Why would a fighter want to be seen as taller than they are? Surely you want to be lulling people into a false sense of security, instead of scaring people away from signing to fight you? I'd be walking in on my freaking knees to have my height taken!
