Because there is not much between the top guys, a millisecond can change the flow of a fight one way or the other, its easy to beat B level guys but genuine top level fighters make for battles.

These guys are formula one athletes its wrong to think it should all be a cake walk, fights are ebb and flow and it shouldnt take away from top guys as they all struggle with somebody.
