Spence/Canelo is more interesting. Presumably both would be in their prime.
Both fights are hard to predict, but I'd give the edge to Canelo against Kovalev, and the other fight is a tossup. I'd like to see Spence and Canelo standing side by side; I don't have a great idea of how they stack up physically against each other. Reported measurements don't say enough.
Canelo in a few short years went from boxing at 154 to 160 to 168 to 175. Hoping for the Kova fight...even if it means he takes an L, at least he dared to do it.
I think the fight with Spence is a closer fight but both fights are interesting and should be hard fought battles. All of these guys come to fight. Canelo's stamina in the Jacobs fight seemed really poor. Canelo boxed very well against Jacobs and won all of the early rounds but he gassed badly and lost a few of the late rounds from inactivity being too tired to throw many punches. Maybe knee problems keep him from training as hard as he should. Canelo only threw 400 punches in the Jacobs fight and Spence threw 1080 punches at Garcia. Spence is a welterweight with damn good power for a welterweight. Canelo has an iron jaw and Spence can't really hurt him. Canelo has fast combinations and lots of power for a middleweight. He can hurt and finish Spence with punches to the head or body or both. Spence is an excellent boxer with a great jab He must box carefully. He has to throw lots of punches but still be very careful. If he can survive the early rounds he can take over the fight in the late rounds with his much higher work rate. I think Canelo would probably KO Spence early. Spence has a good chance to win on points if he can survive the first half of the fight. My pick is Canelo by KO in 6 rounds or less. Kovalev is old and passed prime but he still looked very good in his last fight with his new trainer. Kovalev is a very good boxer with a great left jab and he is famous for his two handed punching power. I give Canelo almost no chance to beat Kovalev. Canelo is a wicked body puncher so a body attack is his best bet. I don't see that working. Kovalev has reach on him and can keep him at bay with his long hard jab. Canelo has to attack hard and Kovalev will hit him on the way in. Can Canelo's great chin take the power of a big punching light heavyweight? I think not. GGG could not KO Canelo in two fights but I think Kovalev will be able to KO Canelo even if it takes lots of punches to do it. I see Kovalev winning easily by outboxing the smaller Canelo behind his jab and landing big punches more and more as the fight goes on. Kovalev by KO and he could end it in any round. If Canelo goes the distance he loses on points even in Vegas. Canelo is better than Kovalev pound for pound but Kovalev is too big for him and a very good fighter himself.
Let's see...GGG and Jacobs couldn't dent Alvarez' chin, so the only intriguing matchup is between Alvarez and Kovalev. Spence has zero chance to defeat Alvarez.

All he ever did at 168 was beat a weak Fielding with a morning weigh in. A guy so bad that the so called can Rolls would beat him. Canelo fighting Callum Smith, the guy who KOed Fielding in two rounds, and fighting him without a morning weigh in would have been impressive. Cherry picking Fielding and making him weigh in the morning is not impressive. Canelo never fought at 175 so don't say he did. Right now him fighting Kovalev is just talk and Canelo may want a catchweight. If Canelo actually fights at 175 then give him credit for it when he does it. You are giving him all this credit for something he has not yet done and may never do. Hell, he even made big middleweight Jacobs weigh in twice.
