I don't think either looked particularly great but Joshua seemed more in control (even though I think the fight was about even) and ended it earlier against an opponent who was objectively more proven. Wilder didn't look like he knew how to box and was getting thoroughly outboxed and benefited from Ortiz' old ass gassing out as much as anything. I say that because Ortiz was hurt earlier but managed to come back and was on the verge of a stoppage he just didn't have the cardio to finish.
AJ looked better overall, but there's no denying it took a few rounds to adjust to Povetkin. Hard to say which opponent had more left in the tank though considering Ortiz and Povetkin we're almost 40 years old.
Don't know who looked better, both did look vulnerable. Judging the fight alone Joshua vs Povetkin was definitely more fun, better fight. Also Joshua didn't look seriously hurt at any point like Wilder did. He got hurt early on but didn't look like he's ready to go.

The fact that Wilder carried his power into round 11 was way more impressive. Its scary AF TBH. But I won't deny that he was getting effectively outboxed the entire fight.
AJ started to adjust after 4, and I loved the way he turned up the gas after hurting Sasha with that right.
The better fight was Ortiz Wilder without a doubt. Let’s not forget Povetkin was dropped in his previous fight against an washed up old David Price and has looked like crap every since he was busted for cheating. AJ looked slightly better because he was in against an smaller inferior opponent . AJ was under pressure to deliver an exciting fight since all the Britts were calling him boring. So I will say Poverkin Joshua was a little more exciting than his other fights
