He didn't... his professional debut in 2013 he was 230pounds. He's steadily put on weight since over a period of years up until a career high of 250 pounds against Klitschko in 2017.
20 pounds in 4 years is a big difference to 30 pounds in 1 year...

He started boxing at 18. This track thing was for a TV show over here in the UK called 'Superstars' which was basically a throwback to a show from the 80's. It featured medal winners from the 2012 Olympics competing in a variety of different events (running, swimming, cycling, kayaking etc) to declare an overall winner. Joshua won that.

That might be impressive by British standards, but it's not that impressive by American Athlete standards.
For example an 11.45 second 100m time is equivalent to a 4.7 second 40 yard time. This was before he put on that extra weight. He must be even slower now. That type of speed couldn't get you into the NFL, or even the NBA. His vertical leap is also bad, as evidence by his inability to dunk a basketball at 6'6 with a running start.
I imagine Wilder has a superior vertical. Also, seeing as he was recruited to play football and basketball, his 100m is likely under 11 seconds.
Wilder is a superior athlete to Joshua. Is he a more technical boxer? No, but he's a superior athlete.
