A really sad way to go out and questions still linger over potential fights with a number of guys but hey, he has made a lot of money in this sport and can rest easy.

Good for Timmeh, he's put in the work and set his family up for life. I appreciate all the great fights that he's given me, one of the most underrated, under appreciated boxers I can think of.

When a top contender doesn't try to get a fight 15 months he is already retired. Bradley has been smart with the large amount of money he has made boxing. He is usually in grueling fights with his swarming, attacking style. I think he is wise to retire with his health in tact since he is very well off and doesn't need the money.

Boxer Tim Bradley and wife opened a restaurant and the style of food is taking over the desert

Monica Bradley’s dreams are coming true.

After years of working alongside her husband, professional boxer Timothy Bradley, on his career, the spotlight is shining bright on Monica’s new restaurant in the Coachella Valley.

Haus of Poké, located on Bob Hope Drive in Rancho Mirage, helped bring the typical Hawaiian dish to the Coachella Valley, a goal that Monica had on her mind from the moment she thought of opening her first restaurant.

“[Haus of Poké] is actually just an eye-opener for the desert,” Monica said. “We wanted to pull people away from their comfort zone so that way if they go out of town and see a poké place then they know what it is. So it’s an introduction [of this type of food] to the community in the Coachella Valley.”

Poké might be a relatively new concept to the valley, but in a short period of time the style of food’s presence has grown, with more locations offering the raw fish dish popping up. This growing trend has Monica already thinking about short-term expansion of the “Haus of Poké” brand.

                  So, what exactly is Poké?

When you walk into Haus of Poké, the staff will greet you with an “aloha” and a “hello.”

Patrons walk to the right to get themselves in line, where a description of what poké is serves both as a distraction while they wait and to teach new customers what to expect at the eatery.

Poké is a raw fish salad served as an appetizer in Hawaiian cuisine, but the meal can also work as an entree depending on serving portion.

Monica said she was inspired to bring poké to the valley after falling in love with the dish during her family’s near-annual trips to Hawaii, as well as after visiting many poké establishments throughout Southern California.

“I usually tend to go places and if I eat ... I don’t want to feel sick from being full,” Monica said. “I feel that with the poke we have enough balance to make you full and make you feel O.K.”

                  'Making it a conversation'

Haus of Poké, like many poké establishments, works as a down-the-line service where patrons are tasked with picking the right ingredients to make the perfect poké salad or poké burrito.

Patrons will choose a base – choices include brown rice, white rice, wonton chips or salad – a protein – ahi tuna and octopus are the most common but there are a total of six proteins to choose from – then they’ll add mix-ins to complement the flavors.

Customers can also pick from a variety of sauces that, Monica said, are the eatery’s crown ***el.

The Haus Special, a blend of soy sauce, chili sesame oil and lime, has become a fan favorite. Mixing that with some eel sauce and ****y mayo, Monica said, will add an extra kick of delicious flavor to the bowl.

While the ordering process might be intimidating to people unfamiliar with poké, Monica said that staff that are assembling the meals are trained to give suggestions, explain the different ingredients and ensure that people get the best combination for their palate.

“We try to tell people to not be afraid. We’ll recommend. You let us know what your taste buds are and we’ll try to match them,” Monica said. “And for that reason I chose not to put descriptions of what my sauces are up on my menu, I chose not to put tags … because I wanted our customer service to be recognized, and the only way to have good customer service is [by] making it a conversation.”

A perk of the down-the-line service? You might be one of the lucky ones being helped by Tim.

“[Tim] will build bowls in the line. And some people sometimes go ‘Tim Bradley just built my bowl!’” Monica said. “He brings great energy. He has such a great personality so people love it.”

The poké trend is on the rise

When Haus of Poké opened its doors on April 18, it was the second restaurant dedicated to the dish in the valley.

Pokéhana, located at 78742 Highway 111 in La Quinta, opened in late December 2016 and both establishments have seen an increase in popularity due to the casual, healthy and delicious alternative they provide to their desert clientele.

Pokéhana announced on their Facebook page the opening of a second location in Palm Desert this summer.

More: A closer look at the new Mediterranean restaurant in the valley everyone is talking about

Haus of Poké, on the other hand, already has plans to open a second location in Palm Springs at the end of 2017 or early 2018, as well as a third eatery outside of the Coachella Valley – location to be announced – in Spring 2018. So the poké trend in the valley, as well as in Southern California, is only starting to grow.

“I just hope that [Haus of Poké] is something that brings people a different concept of what food can be. I hope that people enjoy it and I hope to keep the quality as we grow,” Monica said. “I’m a very hands-on person. In a way, I can be a perfectionist so if my name is on it, I expect for it to stay the same from beginning to end.”

Either retire or potentially face Spence

Good move Tim. You've been in far too many wars and have too many miles. Nothing wrong with only losing to Pac
