Taking "rest" Fights

I've never understood the concept of taking easy fights between hard fights to recover. How do they not recover in the months between fights?

They concept is that they don't wanna take a risk, want the money, and to stay active.

I think there is the mental component as well. However when dudes are only fighting twice a year they should match tough 3 out of every 4 fights IMHO.
