No GGG isnt a LHW , like you said he rehydrates to around 175, that makes him a middlweight or like a SMW. Doesnt matter how tall you are or how long your reach is, there is weight classes not height and reach classes for a reason.

Canelo doesn't need to waste his time with GGG, they are the one's desperate and thirsty for a payday.
K2 and GGG are realizing all the belts in the world doesn't mean more money for them. They are the B side to a Kell Brook who's best win is Porter.
If K2 takes a step back and realize they will dictate nothing for a Canelo fight then it may happen. But if the want to pretend GGG is a star then they can feast on bums until he is done an be quickly forgotten.
