there is a dispute if you havent fought the best and looking at the top 5 middleweights, he hasnt fought any of them to be considered undisputed

Makes little sense for GGG to move up now. Potentially there are more fights at 160 for him, than at 168. When he takes WBO and lineal titles off Canelo, finishes Jacobs and Eubank, by that time Andrade and Charlo brothers will be ready to step up to 160. And maybe after that Zurdo will be big enough name to warrant massive PPV. And after that Ward and Kovalev. And a happy retirement when no one is left. Somewhere in between all those fights we might see Chavez Jr, Lara and a bunch of mandatories.
