Why 144lb catchweight? If Marquez can easily make 140 and Alvarado fights at 140.

...because it is a WBO welterweight title eliminator, and the welterweight division, by definition, is any weight above 140 and capped at 147. Both guys, in size, are solid jr welterweights, so going all the way up to 147, in all honesty was unnecessary.

Both guys thought that 143 was a fair weight, so the fight was set at 143.
