It means they looked great the previous fight, but the next fight who ever they fought kicked their ass, so now they're all of a sudden old and done to discredit the fighter that beat them.

that entire topic alone is debatable though.
some days i have good days some days i have bad days ..some months are bad for me energy wise regardless how much i work out..some months are great..
some months i look shot ..some months the planets are in my favor..
but alot of fighters bounce back and plenty have before..
Ive never really seen a fighter get old over night ..many bounce back
some times psychological trauma eats you though hence hatton,hadmed,pavlik,jermain taylor,meldrick taylor,and many more
but fighters just like us have frequent ups and downs

It refers to a fighter who had one last good performance left in him but age caught up with him soon after and it showed on his next fight.
Overnight is not used literally, it is used more as a replacement for the world suddenly.
