    which olympic class was the best

    1996, 2000, or 2004. I say 2000 mainly because the lower weight classes. 2004 had a lot of HBO hyped guys that never lived up to it like berto, Lopez, angulo etc

        Last Olympics (2012) should prove to be real promising.

                  OK - just from Wiki and going off the top 4 (ie the medalists) these are some of the names that have subsequently turned pro. There's plenty of others who didn't medal cos they were beaten by some of the guys listed (or top ams who never went pro), Despaigne, Pascal and N'Jikam for instance were all MWs in 2004. Berto, Angulo etc also fall into this category.
