Roy Jones Jr. comes to mind. He's just doing it for the money at this point and it's sad. His last good performance? Maybe against a bloated Trinidad in January 2008?

Roy Jones Jr. fits the description to a T.

His last great fight was his narrow win over Tarver after dropping all of the weight he gained to fight at heavyweight. He should've retired after that.

I would add Tarver, Michael Grant and Oliver McCall to the list as well.

There are a lot, basically any fighter that was once a name or world champ that is dug up to make a new guys resume look good. Taylor is making or attempting a legit comeback. Roy's fighting for the purses. Mosley was one, Ouma, Vasquez, Morales. The list is quite long and you could do this all day.
