The fight in which Mayweather showed the most heart was against Carlos Hernandez at 130 where he went down officially for the first time because of the pain in his right hand I believe it was, he ended up messing up both his hands in that fight and still finishing the fight.

Now that Mayweather is the subject, I am going to say N'Dou against Floyd back in 2003. That is one of my favorite fights from the 00's and it was because of the heart display by N'Dou. Check out round 5 if you have never seen it.
