example: would they pick an opponent who is immortal, has power, never gets tired, can fight for 24 rounds like it is the first round, etc?

its just up to the cherry picker to deliver the win.

Muhammad Ali would take the fight just to prove he's better than youre immortal dude. Foreman prior to the Ali fight had that kind of invincible monster aura around him.

I also believe that some crazy(warrior) dude like Gatti would be willing to take the fight.

Well it happens with those that have become established, but people can exaggerate at times, like fighting the top dogs within your division shouldn't be considered cherry picking.
