Wladimir Klitschko vs Lennox Lewis 2003. (Corrie Sanders ended that dream)

Come Back Foreman vs Mike Tyson early 90's

Tito Trinidad vs Shane Mosley (Prime)

Young George Foreman vs Larry Holmes

Marvin Hagler vs Michael Spinks at LHW (I know this sound like a huge mismatch at 175, since Hagler had to move up from 160, but I think Hagler will surprise a lot of people and make it into a classic)

Roy Jones Jr vs Nigel Benn at 168

38 Year old Lewis rematch against Vitali. 2004.

Benn vs Calzaghe would have been possible. Benn was shot, when Calzaghe was still very green. Well it would have been possible, but it won't have been fun lol.

As far as excitement, without question the Trinidad/Mosley fight. Why that never happened is beyond me. But as far as intrigue, i would have loved to seen how/if Tyson could have handled Foreman in the early 90's. Would have been crazy as hell if Foreman had knocked him out.
