Too many to list. Especially with the way Top Rank and GBP match their fighters.

Holyfield was a huge underdog against Tyson in their first fight. I believe he was the underdog in the rematch too.
EDIT: My bad Tyson was the Champ

Yuri Foreman the former WBA Junior Middleweight champion was the underdog against Miguel Cotto.
Miguel Cotto the former WBO Welterweight champion was the underdog against Manny Pacquiao.
David Diaz the former WBC Lightweight champion was the underdog against Manny Pacquiao.
Ricky Hatton the former Lineal Junior Welterweight champion was the underdog against Manny Pacquiao.
Let us turn this around a little bit:
Sugar Shane Mosley the former WBA Super World Welterweight champion was the underdog against Duckweather.
Zab Judah the former IBF Welterweight champion was the underdog against Duckweather.
Carlos Baldomir the former Lineal Welterweight champion was the underdog against Duckweather.
Another turn of the page:
Julio Cesar Chavez the former WBC Light Welterweight champion was the underdog against Oscar de la Hoya.
Thomas Hearns the former WBA and WBC Welterweight champion was the underdog against Sugar Ray Leonard.
